"Gaudeamus" Extra Virgin Cold Pressed Olive Oil, is a high quality oil extracted from a single variety of "Peranzana" olives.

It is a very small olive grove of centuries-old trees that produces a very limited amount of olives that from a centuries-old tradition are handed down from generation to generation the farmers of the house of Torremaggiore. La raccolta delle olive che producono l’extravergine “GAUDEAMUS” avviene verso la metà di ottobre quando l’oliva è ancora parzialmente acerba per conferire all’olio quelle note di amaro e di piccante più accentuate. La molitura avviene rigorosamente a freddo nell’arco di 12 ore dalla raccolta. Il suo gusto equilibrato esalta e valorizza insalate, verdure cotte, pesci e carni arrosto o bolliti, minestre, legumi o bruschetteViene prodotto in edizione limitata “Gran Riserva” con bottiglie numerate. La "Peranzana" cresce principalmente nella parte settentrionale della regione Puglia in Italia, e a Foggia nell'Italia meridionale. "Peranzana" è una cultivar di olio d'oliva. Una cultivar è la varietà di oliva. Proprio come l'uva Chardonnay è usata per alcuni vini, le varietà di olive, o cultivar, sono usate per le loro caratteristiche uniche per produrre oli di oliva monovarietali.
